NDSR Fluoride

NDSR Fluoride is the first software to assess total fluoride intake for individuals. It is designed to capture fluoride exposure from dietary sources, non-dietary sources and water. This program features 158 nutrients, nutrient ratios and other food components for over 18,000 foods and incorporates values from the USDA-NDL National Fluoride Database. NDSR Fluoride permits direct data entry of dietary and non-dietary sources of fluoride during a dietary recall interview.

Since the type of water used contributes significantly to fluoride intake, the collection of samples of water and water-based beverages consumed during their recall day is required. Fluoride retention factors have been developed for foods prepared in water that retain fluoride during preparation, e.g., vegetables, pasta. The collected water and water-based beverage samples are sent to a laboratory for fluoride assay. Laboratory results are merged into NDSR Fluoride to compute total dietary fluoride, combining laboratory fluoride concentrations from water sources and water-based beverages with the collected dietary data.

The NIH National Institute of Dental and Craniofacial Research (NIDCR) and the National Heart, Lung, and Blood Institute (NHLBI) provided the funding to develop the methodology and software for the assessment of dietary and non-dietary fluoride intake for individuals. Work on this project was collaborative with the USDA Nutrient Data Laboratory, the Food Analysis Laboratory at Virginia Polytechnic Institute, and the University of Iowa College of Dentistry.
